The Dalmore Constellation Collection 1978
The Dalmore Constellation Collection 1978, Cask No. 1 is a distinguished Highland single malt Scotch whisky, meticulously crafted to capture the essence of its 1978 distillation. This limited edition expression is initially matured in American white oak ex-bourbon casks for 29 years, enhancing its sweet malt, soft fruit, and citrus characteristics. In 2007, the whisky is then further enriched by being transferred to an Oloroso sherry butt for an additional 4 years, imparting additional layers of complexity. On the nose, it offers enticing aromas of apple blossom, forest fruits, blackcurrants, fleshy plums, and crème brûlée. The palate reveals flavors of moist lemon cake, juicy dates, persimmons, and almonds, tied together with notes of pear, peach, and mango, leading to a finish of rich plum complemented by moist ginger cake, roast chestnut, and soft wood spice. Bottled at 47.1% ABV, this non-chill filtered expression maintains its natural color, exemplifying The Dalmore's commitment to exceptional craftsmanship.
